2011 Steel Cook winner Chef Joshua Armstrong of "Riverview Cafe and Catering by Firefly" demonstrates the Blue Cheese-Bourbon Soup that wowed the judges in the final round of the competition. Enjoy! Here's Chef Armstrong's recipe: Blue Cheese-Bourbon Soup -- Serves 4 1/4 cup pecans 1 tbsp sugar 1/2 yellow onion diced 1 tbsp duck fat (or oil) pinch black pepper pinch nutmeg 1/3 cup bourbon 1 qt heavy cream 4 oz crumbled blue cheese Heat pecans on tray in oven til warm, then toss in sugar. Return to oven for a few minutes til crunchy. Heat duck fat in flat, open fry pan. When hot add onions, pepper and nutmeg. Cook til soft. Carefully add bourbon and tilt pan to ignite (with a gas stove) or use long lighter or match (electric stove). Allow to burn about one minute, as you want to retain some of the alcohol. Add cream and bring to high simmer -- almost a boil -- and allow to reduce and thicken. Keep an eye on this as the pan can boil over easily! Add blue cheese and stir to melt. This will thicken the soup. When melted divide into four small cups. Sprinkle with a few drops of bourbon. Garnish with glazed pecans and a pinch of nutmeg. Enjoy! Excellent for appetizer or first course before a steak, or as a dessert with fresh fruit. Can be made a day ahead of time, refrigerated and re-heated before serving.
